Handmade Bruschetta on Flatbread: Two Family-Friendly Ways
I don’t know about you, but lunch at my house can sometimes be a little frustrating. While I’m craving something full of flavour (like a chicken vegetable wrap with lots of sauce and spices), my girls are screaming for the mildest food available on earth (like macaroni & cheese or grilled cheese sandwiches). I’ve been experimenting with different ideas for lunch that can please both my more mature palate and the girls’ milder palate without lots of work on my end. The following recipe has been a huge hit at our house – I whip up a quick batch of amazingly good homemade bruschetta, and then make a simple dish for them and a simple lunch for me with most of the same ingredients. It’s so easy and tasty!
In this recipe, I’ve used juicy, meaty California Tomato Farmers’ Field Tomatoes. These guys are so good that my 20-month-old snuck a tomato from the box when I wasn’t looking and started eating it like an apple.
It’s no wonder these tomatoes are so tasty right out of the box – California provides just the right environment for tomato growth with warm days and cool nights to produce a meaty tomato that’s full of flavour. California Tomato Farmers’ tomatoes are available here in Canada from May to November.

Homemade Bruschetta on Flatbread: Two Family-Friendly Ways
Ingredients:
- 2 large California Tomato Farmers’ field-grown tomatoes, chopped into small squares
- 1 clove fresh garlic, chopped
- 1/2 cup fresh, chopped basil
- 1 Tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
- naan bread or tortillas
- grated parmesan cheese
- grated mozzarella cheese
- pizza sauce or spaghetti sauce
- chopped rotisserie chicken
- ranch dressing or tzatziki sauce
First, make a small bowl of bruschetta by mixing the tomatoes, garlic, basil, olive oil and salt & pepper together. The great thing about bruschetta is that it can be stored for a day or two and the flavour marinates and gets even better! To make the bruschetta pizza for kids:
Spread some pizza/spaghetti sauce on your flatbread and top with a layer of bruschetta.
Sprinkle with grated mozzarella cheese. (You could also add some chopped chicken if desired.)
Broil on the top rack of your oven for about 5 minutes, or until the cheese is melted and slightly browned. Cut, cool and serve!
Chopped up into toddler-sized bites, this makes a great toddler lunch. To make the bruschetta chicken wrap:
Spread bruschetta in the center of your flatbread. Top with sliced rotisserie chicken, parmesan cheese, and a drizzle of ranch dressing or tzatziki sauce.
Roll the flatbread and dig in! This makes a wonderfully flavourful lunch or light dinner.
And the pizza is perfect for your younger crowd of hungry eaters!
The best part? At only 35 calories, one medium tomato provides 35% of the Daily Value (DV) of vitamin C and 14% of the DV of beta-carotene. Tomatoes are cholesterol and sodium free.
