Pumpkin Spice Snickerdoodles Cookie Recipe
Snickerdoodles get a seasonal spin with the addition of homemade pumpkin spice mix right in the batter! These cookies are chewy, flavourful, and the perfect Fall and Winter baked treat.

There’s nothing quite like snickerdoodles – not only are they fun to say (my girls think the word’s hilarious!), but they’re delicious to eat. The crunchy cinnamon-sugar coating, the soft and chewy center, the buttery taste… YUM!
Recently, my mom had to bake dozens of cookies for a wedding, and she reported that the most popular ones were the snickerdoodles. She also reported that she tried using lard in her cookies instead of butter, and the result was an amazingly textured cookie. I decided to give both snickerdoodles and lard a try for this recipe today!
Another update to the humble snickerdoodle? The addition of homemade pumpkin spice mix to the batter itself. It gives these cookies a bit of a spicy kick so that they taste a little like a gingerbread cookie, but still much milder and sweeter.
Ready to bake? Here’s the Pumpkin Spice Snickerdoodle recipe! This recipe makes at least 4 dozen cookies, so it’s perfect for freezing half the cookies to save for the holiday season.
- 3/4 cups butter
- 3/4 cups lard
- 2 cups granulated sugar
- 3 eggs
- 1 tsp vanilla extract
- 3 1/2 cups flour
- 3 tsp cream of tartar
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp [url href=”https://thediymommy.wpsc.dev/diy-pumpkin-spice-mix/” target=”_blank”]DIY pumpkin spice mix[/url]
- Topping
- 1/4 cup granulated sugar
- 1 tbsp cinnamon
- Pre-heat the oven to 375F.
- Soften the butter, and mix together the butter, lard and sugar in a bowl.
- Add the eggs and vanilla and mix.
- In a separate bowl, combine the flour, cream of tartar, baking soda, salt and DIY pumpkin spice mix. Pour the dry ingredients into the wet ingredients and mix.
- In a small bowl, mix together the granulated sugar and cinnamon for the topping.
- Roll the cookie dough into 1 inch balls, roll each ball in the cinnamon-sugar mix, and place on a prepared cookie sheet.
- Bake the cookies for 8 minutes, remove from the oven and cool.

Snickerdoodles sounds interesting right! Cookies are a must have in our home especially now that we are still in quarantine. I need to find ways and new delightful dessert to serve to my family and this one is top on my list. It gets the flavor of the pumpkin.
